Chicken Parmesan



Chicken Parmesan
Some changes made by me
I think this is the best Chicken Parmesan that I have made! It was really quick and easy! Since I didn't have to fry it completely through it made for the perfect crispiness and probably a little bit more healthy too!
4 boneless, skinless chicken breast halves (5 to 6 oz each)
*I used 10 thighs because that's what I pulled out of the freezer
Salt & freshly ground Pepper
1 cup all-purpose flour
*I used whole wheat flour & 1 cup was way to much so I think this could be cut in half
3 large eggs, lightly beaten 
2 cups Panko or seasoned dry bread crumbs
1 cup canola oil
*I used extra virgin olive oil & some Wild Tree Basil Grapeseed oil
1 1/2 cups Auz Delices's Marinara Sauce (pg 129), or store bought tomato sauce, warmed
1 cup grated Provolone cheese
*I didn't have any so I didn't use it
1/2 cup freshly grated Parmesan cheese
*I used the kind that you just buy at the store
*Garlic powder
* Italian seasoning
*1 package noodles, cooked

  1. Preheat the oven to 350 degrees
  2. Season the chicken on both sides with salt and pepper.
  3. Put the flour in a shallow bowl or on a plate, put the beaten eggs in another bowl, and spread the bread crumbs in a third. *This is where I added the garlic powder and the Italian seasonings to add more flavor to the chicken. Dip the chicken first in the flour to coat on both sides and then dip in the egg to coat. Last, dip the chicken in the bread crumbs to coat. As each chicken breast is coated, set it aside on a plate.
  4. In a large saute pan, heat the oil over medium-high heat until the oil is very hot. Drop a few bread crumbs in the oil and if they sizzle, the oil is hot enough. Cook the chicken for 2 to 3 minutes on each side, or until golden brown. Lift from the pan with tongs or a wide spatula and transfer to a baking dish large enough to hold them in a single layer. * I used the Pampered Chef cookie sheet. Bake for 10 minutes, or until crispy and cooked through.
  5. * I didn't do the last step. We don't like a lot of sauce on our pasta or chicken so I just mixed the sauce with the noodles
  6. * I also made 2 without any breading because my dad has to watch his carb intake. I just seasoned them and baked them in the over with the rest of the chicken.
  7. Take the pan from the oven and spoon the sauce over the chicken to cover. Sprinkle with the grated cheeses  Return to the oven and bake for 5 to 8 minutes longer, until the cheese melts and the sauce is hot  Serve hot.

This was a huge hit for my family! They all loved it and agreed that this was the best recipe for Parmesan Chicken that I have made!

My Pregnancy Story with Monkey

So I have one of those crazy "I didn't know I was pregnant" stories. Yes I didn't know I was pregnant until I was pretty far along but I will get to that.  In May 2008 we picked up and moved out of state. At this time we had been completely off birth control for 2 years and nothing. We also found out when we first started trying that I have PCOS (polycystic ovarian syndrome)  which basically meant "good luck getting pregnant". We decided that we would start the adoption process if we were not pregnant by the time we were 30 so we had a few years (still do actually! Yeah God!)
