Freezer Meals

My new adventure. Since the hubs has been gone it has been hard for me to decide what to cook since it is just me and the monket so this is my plan I'm going to cook one day and make a bunch of meals and freeze them so that way I can just defrost them and cook them without much motivation at the end of the day. This will also make good for  when the hubby is home because we are always so busy that we tend to eat out and spend money we shouldn't because I don't have time to make full meals. This is going to be my new hobby. I went to the store and bought my first cookbook that has all freezer meals in it. I'm super excited! Hope this works out for us because it would be so much easier. I will share the recipes as I make them and if they are any good. If you are interested having more time in the evening with your family this might be the option. The cookbook I will be using and referencing is Cook For A Day Eat For A Month   Frozen Assets by Deborah Taylor-Hough. Wish me

Back to Real Life

Hubby's on a plane in the morning and Monkey is acting out all day. Saying goodbye to daddy this morning didn't really go well. He didn't cry, didn't act out, was very good in the airport but now he's a whole different child. He's testing my limits on anything and everything! We have decided that this traveling position for the hubs is great for our family because before he was working 12 to 15 hour days 6 days a week and on Sunday was so tired that he really didn't want to do much. Now with this traveling we don't get to see him in the evening for the hour before he would go to bed but in exchange we get to have 4 whole days together. It looks a little like this: Thursday: plane ride home and out to dinner and to bed early Friday: I'm gone in the morning with my mom's group and the hubs sleeps in and vegs out on the couch for the morning to recuperated from the days at work. The afternoon and evening are low key but quality family time. Saturday

Teeth are a wonderful thing!

We haven't had any problems teething with our monkey. All his teeth came in perfectly fine with very little discomfort to him. No all nighters screaming, maybe just a picky eater. Last night though his poor little 2 year old molars decided to make themselves known and I was up half the night with a very unhappy child. He's so independent that he didn't want me to cuddle with him, he didn't want Mommy really at all but would scream when I left. I finally got him to cuddle with me for about 20 minutes in the rocker and I think it was just enough to take the pressure off his ears so he could fall asleep. He then slept the rest of the night (or I just slept through his crying which is possible). It never fails that things like this happen on the nights before you have a busy day ahead with no specific nap time for him in site. Today should be interesting but a mom always has to be ready for the unexpected so I will be packing a tricks bag with me today and have plenty of ac

Busy Day!

So today is a crazy day. I probably would be more awake if I would have ate better yesterday and if I would have got up in the morning and worked out and did my morning routine but instead I decided to sleep in since my hubby was home. Since we don't get to see each other very often right now I figured that was more important. Of course I chose to do it on the day that I had a mom's group play date. I was running late to that and then forgot to pack snacks for my kiddo's and ended up having to stay later than I probably would have with being so tired. The good thing is that my hubby is home. He helped get lunch started while I was driving home and soon as he gets back from getting his new glasses I'm going to take a nap. Then it's time for me to hit the grocery store for some food for us this weekend. I guess I better figure out what days we will actually be eating at home since we have plans with family and friends. Plus I need to get started on the hub's laund

Our Family

Our family consists of my husband, myself, and our son who is almost 2! We currently have two dogs, but are looking for a new home for them because moving is in our new future and possibly a lot of traveling. My hubby works for a roofing company and it now traveling for work and is gone 10 days and home for 4 days. It makes life interesting but at least he gets to come and visit and if he keeps traveling we will probably start going with him, but that's still several months away. So I stay home every day with our son and watch a little girl that is only 6 weeks older than him. I have to make sure and keep plenty of activities on our calendar to keep them busy or I will go crazy. I also run a Christian mom's group because I needed some like minded mom's to talk with and the kids really could use some other kids to play with. I love it! Everything right now is going pretty good. Don't get me wrong we have had our fair sure of problems throughout our marriage and parenthoo
