Meals This Week!

I have been struggling with meals that are healthy for me and that will fit with all of my family's needs. M can be a bit picky on what he eats and sometimes I just make him deal with it but I really do try to make things he will like. Then now that we have my parents to consider with meals I have to watch the sugar/carbs levels for my dad and salt/sodium levels for my mom. Try to figure all that out. Plus lunch is something that I have always struggled with on what to feed Rex and myself that is easy but also fits the nutritional needs of both of us and not get board with just sandwiches or mac & cheese. 


So here is what I did. I got online and looked up recipes and I'm going to try them out this week and see how it goes. So here is my list.


For Lunch:
Grilled Cheese with tomato soup, an apple and milk
Grilled pork sliders with honey BBQ sauce sandwiches and veggies
BBQ sauce stuffed potatoes
Grilled chicken and pineapple sandwiches
Egg salad sandwiches, leftover veggies, banana


For Dinner:
Pork Chops, baked potato, broccoli
Caribbean Chicken, rice, veggies 
Pasta and Italian sausage and salad
Beef Stroganoff (crock pot)
Grilled Chicken with peppers, zucchini, squash, and chips and salsa


I tried to set up each day with ideas that would allow me to cook something the night before and then use it the next day for lunch. So Monday I will have pork cooked for Tuesday's sliders and a potato cooked for Wednesday's and Tuesday night I will cook the chicken for the stuffed potatoes on Wednesday. This will make less work for me during the day and really healthy meals for lunch for both Rex and myself. I'm hoping that I can also work on sending healthy meals with M for lunch as he is heading back to work. The hard part with that is because he works in other peoples homes (he does home improvements for people) he doesn't normally have access to warming things up and he has to be able to keep what he is eating fresh in a lunch box and not a fridge. I will start working more on this after I get meals down at home. Hopefully some I come up with will be ones that I can figure out how to send along. Until then he will have to deal with sandwiches everyday. So I will update either this weekend or next week after I make my new meals and let you know how it goes. After I find out which ones are good I will also post the recipes so that you can also enjoy them. Wish me luck on my meals this week ;)

My Pregnancy Story with Monkey

So I have one of those crazy "I didn't know I was pregnant" stories. Yes I didn't know I was pregnant until I was pretty far along but I will get to that.  In May 2008 we picked up and moved out of state. At this time we had been completely off birth control for 2 years and nothing. We also found out when we first started trying that I have PCOS (polycystic ovarian syndrome)  which basically meant "good luck getting pregnant". We decided that we would start the adoption process if we were not pregnant by the time we were 30 so we had a few years (still do actually! Yeah God!) So we were just enjoying life in Oklahoma and enjoying the small town life. Every Sunday morning we would walk down the street and enjoy breakfast at Selena's, we'd sit on our front porch and talk with the neighbors, and visit family in town at least once a week.
