Yummy Spaghetti Squash

Spaghetti squash is something that I have tried cooking before and no matter what I do it always seems to come out wrong or taste AWFUL! So of course when I started Trim Healthy Mama I was finding that spaghetti squash is a good alternative to pasta. I'm not someone though that can fully replace pasta and meat sauce with spaghetti squash. So the recipe search began.

I started pinning away lots of THM friendly recipes and then ran across two spaghetti squash recipes that I pinned quickly.


I HAD to try the Buffalo Spaghetti Squash recipe ASAP! I mean who could see this picture and not try it!

Luckily I was in Colorado visiting with my dad which is where I get my love for buffalo chicken wings so it was a must try before I went back home. It was a hit! And oh it was oh so filling too! There was plenty of leftovers for days to follow. If I were to make it again I would cut the hot sauce down just a little. Even dad and I were sweating bullets by the end of it. But I would also cut the recipe in half to only make one squash. Maybe once my boys are grown and enjoy hot wings as much as my dad and I do then I will use the whole recipe. 

So since I couldn't make this for the boys or my mom I had to find something else for them to eat. My boys are still adjusting to spaghetti squash and most of the time they refuse to eat it. Lucky for me, not them, Popa had promised them a trip to the ice cream shop if they behaved all day and ate without whining. Little did he know what he was asking with what I had planned for dinner. We don't normally bribe in our house but have a general rule that if we have dessert to eat you have to eat your dinner. My mom has a love for Mexican food so when I ran across a chicken enchilada stuffed spaghetti squash recipe I had to try it for them.

I'm not a big Mexican flavor food eater but this wasn't half bad. My mom made her own enchilada sauce and made it without many spices because she wanted to make sure that it wasn't too spicy for the boys. Personally I would have added more because it was a little bland but we weren't sure how the flavors would be so we will now better for next time. 

So if you are new to THM or if you are looking for some yummy ways to cook spaghetti squash here are two recipes that are worth trying! Enjoy!

I got a great idea from this lovely  blog  about doing a ABC photo book through out the year. Each week taking one photo that goes along with a letter. Bikini Body Mommy Challenge Update!

So we are starting week 8 (I think). It's been a few weeks since I have officially sat down and updated on how I have been doing. Week 6 I did pretty good. The 4 am workouts were starting to wear on me so I decided to try and get a workout in after my hubby left for work but before the kids got up. Some days that went OK and other days not so well. I did however get several workouts in with the boys awake and they went pretty well. Monkey tired to join in with me and it was quite fun to watch. Of course he couldn't keep up with the workouts and took many breaks but it was fun to have him involved. This week I plan to do cardio days at 4 am in the gym because they are easier than trying to complete in the house. But for the non-cardio days I will do them in the house in the morning. That way I'm not completely exhausted everyday. Now for week 7. I have no idea even what the workouts were for last week. I didn't even look once! I have good reason though. My hubby h...

Baby Bumpdate: Week 35

35 Weeks! That means only 5 left!!!! Holy cow!!! I think I'm starting to freak out just a little!!! How far along? 35 Weeks! Yea! How big is baby?  He's about 18 inches and just over 5 pounds. Weight gain? I gained a pound last week. Maternity Clothes?  Of course. I'm living in tanks right now because of the heat. Just wish I had more shorts to wear. Stretch Marks?  Nothing new. Just the ones from before and Monkey. Sleep? With this cold I'm not sleeping much. I'm getting a little better and able to sleep about 4 to 6 hours at night and then at nap time I'm able to get 1 or 2 more hours of sleep. However, I'm still exhausted especially because of the heat. It just drains all my energy. Even when I'm sitting in the shade under a fan.
